    <h2>Most fiber gets lost in the trash, not on the plate.</h2>
    <p class="intro">The average household tosses a real chunk of the fruit and veggies it buys, usually because it spoiled before anyone got to it. Every wilted bunch of kale is fiber you paid for and never ate.</p>
    <p>We&#8217;re going to talk more about logistics than recipes here today. Buy the produce, then set it up so it&#8217;s still good on Thursday. Two small habits do most of the work: store things so they last, and prep a few of them so eating one more serving takes zero effort. The second part will have you eating more fruits and vegetables and <a href="https://wellnessafclub.com/app/">logging more points in the app</a>.</p>
    <p>One rule before the list. When the peel is edible, leave it on. Up to a third of a vegetable&#8217;s fiber lives in the skin, and roughly half of a potato&#8217;s does. Peeling is just throwing the fiber away.</p>

          <p>Raw veg keeps degrading in the freezer because enzymes still work in the cold. A 60-second boil (blanching) shuts those enzymes off, so frozen broccoli still tastes like broccoli in three months.</p>

    <p class="eyebrow">The freezer is your backup plan</p>
    <h2>Buy fresh, freeze the overflow</h2>
    <p class="intro">The cheapest way to always have fiber on hand is a freezer that isn&#8217;t empty. Frozen produce is picked and frozen at peak, so it often holds as much nutrition as the fresh stuff that&#8217;s been riding in a truck for a week.</p>
    <p>For most vegetables, blanch first: drop them in boiling water for 1 to 3 minutes, then straight into ice water, then dry and freeze flat. That quick boil switches off the enzymes that would otherwise keep degrading color, texture, and nutrients even at freezer temperatures. Underdo the blanch and you make it worse than not blanching at all, so set a timer.</p>
    <p>Fruit is easier. Wash, dry, freeze in a single layer on a tray, then bag it. Berries, banana chunks, and mango go straight into smoothies, no blanching needed.</p>

<p class="wp-block-paragraph">Welcome to <strong>The Wellness AF Club</strong>. I’m Jennifer, and I’m glad you’re here.</p>



<p class="wp-block-paragraph">This space exists for one reason: wellness should not feel confusing, shame-filled, or impossible. I created this evidence-based wellness podcast to explain how your body actually works and how to build health in real life—without gimmicks, extremes, or fear-based messaging.</p>



<h2 class="wp-block-heading">For years, health felt like a fight I couldn’t win</h2>



<p class="wp-block-paragraph">For years, my relationship with health felt frustrating and inconsistent. Like many women, I cycled through diets and trends, promised myself I’d “start Monday,” and chased the same five to ten pounds over and over. Sometimes I lost weight, but the pattern was almost always the same: gain it back, then gain a little more.</p>

<h2 class="wp-block-heading">The turning point</h2>



<p class="wp-block-paragraph">About five years ago, after more than 20 years as a stay-at-home mom, I became a certified medical coder and spent my days reading medical charts. What I saw was hard to ignore: chronic disease, preventable complications, and quality of life declining over time. It became personal—I could see where my own trajectory could lead if I didn’t change.</p>

<h2 class="wp-block-heading">Discovering the science</h2>



<p class="wp-block-paragraph">I went back to school and earned a degree in Health Science. In nutrition and wellness courses, everything started to click. The fundamentals weren’t flashy, but they were clear and evidence-based: balanced nutrition, regular movement, and consistency beat extremes every time.</p>



<h2 class="wp-block-heading">Going deeper</h2>



<p class="wp-block-paragraph">I kept going because I wanted practical answers for real life. I completed additional education through NASM as a <a href="https://credentials.nasm.org/78e0983c-3ce6-4ddd-bbfa-b5a197c72d78#acc.bBcnwPDM">Certified Nutrition Coach</a>, <a href="https://credentials.nasm.org/ba5f56a2-d404-4cdc-a875-5a9abfa487e5#acc.HQMI4W1e">Fat Loss Specialist</a>, and Wellness Coach, and I’ve kept studying anatomy and physiology, pathophysiology, research methods, statistics, and behavioral health, and I start a master’s program in fall 2026.</p>



<p class="wp-block-paragraph">The more I learned, the more obvious it became: the science is often clearer than it looks, but it gets buried under trends, noise, and bad messaging. That is exactly why The Wellness AF Club exists.</p>
